Spanish omelette with chorizo sausage, baked in the oven

This dish is both delicious and easy to cook. It’s a mixture of a traditional Spanish omelette and an egg cake, because it’s baked in the oven. The flavour is SO delicious and everyone loves it. The omelette is great for people like me, who normally can’t eat potatoes without a good sauce, because the potatoes gets so tender and they absorb the flavor from the chorizo sausages.

Here are the ingredients (4 people):

  • 10 eggs
  • 300 - 400 g potatoes
  • Chorizo Sausage, as much as you like!
  • About 1.5 - 2 dl milk
  • Thyme, salt and pepper

At first you boil the potatoes in salted water and cut them into cubes. Mix the eggs and the milk in a bowl and add salt and pepper. Put the thyme on a pan and add some olive oil when you really can smell the thyme. Now, you add the chorizo sausages, which you have sliced, to the pan, and fry them for about 5 minutes. Add the potatoes to the pan, so that they absorb all the delicious paprika and fat mixture from the sausages.

Now you put all the ingredients to a dish and pour the egg and milk over them. Put the whole thing into a warm oven, about 200 Celsius, until you think the dish looks nice and colored.

You can serve the Spanish omelette with chives and tomatoes, or just serve it from the dish. Enjoy!
